Algeria Chakhchoukha
Description
Chakhchoukha is a traditional Algerian dish made from torn pieces of flatbread served with a rich stew of meat and vegetables. This dish is often enjoyed during family gatherings and celebrations, symbolizing hospitality and community.
Ingredients
- 500g of lamb or beef, cut into pieces
- 2 large onions, chopped
- 3 cloves of garlic, minced
- 2 medium tomatoes, chopped
- 1 red bell pepper, chopped
- 2 medium carrots, sliced
- 1 zucchini, sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups of water
- 500g of flatbread (such as khobz or rougag)
- Fresh coriander for garnish
Instructions
- In a large pot, heat some oil over medium heat and sauté the onions until translucent.
- Add the garlic and cook for another minute.
- Add the meat and brown on all sides.
- Stir in the tomatoes, bell pepper, carrots, zucchini, cumin, coriander, paprika, salt, and pepper.
- Pour in the water and bring to a boil.
- Reduce the heat, cover, and let it simmer for about 1.5 hours or until the meat is tender.
- Meanwhile, tear the flatbread into small pieces and set aside.
- Once the meat is cooked, remove it from the pot and shred it.
- In a large serving dish, layer the torn flatbread and pour the stew over it.
- Top with the shredded meat and garnish with fresh coriander. Serve hot.
