    Afang Soup is a rich and flavorful dish made primarily from Afang leaves (wild spinach) and waterleaf, often enjoyed in the Efik and Ibibio cultures of southeastern Nigeria.     Ingredients

    • 500g Afang leaves (wild spinach), finely chopped
    • 300g Waterleaf, finely chopped
    • 500g assorted meats (beef, goat, or chicken), cut into pieces
    • 200g stockfish, pre-soaked and cut into pieces
    • 200g dried fish, cleaned and deboned
    • 1 cup palm oil
    • 2 tablespoons ground crayfish
    • 2 tablespoons ground pepper (or to taste)
    • 1 onion, chopped
    • 2-3 cups beef or chicken stock
    • Salt to taste

    Instructions

    1. In a large pot, boil the assorted meats with chopped onions and salt until tender. Add the stockfish and dried fish, and continue to cook until all the meats are well cooked.
    2. Once the meats are cooked, add the palm oil and allow it to simmer for about 5 minutes.
    3. Stir in the ground crayfish and pepper, mixing well.
    4. Gradually add the waterleaf and cook for about 5 minutes until it wilts.
    5. Finally, add the Afang leaves and stir thoroughly, allowing the soup to cook for an additional 5-10 minutes. Adjust seasoning as necessary.
    6. Serve hot with fufu or pounded yam.
