    • 1 cup dates, pitted and chopped
    • 1/2 cup walnuts or almonds, finely chopped
    • 1 tablespoon orange blossom water
    • Powdered sugar for dusting

    Instructions

    1. In a large bowl, mix the flour, semolina, powdered sugar, baking powder, and ground cinnamon.
    2. Add the softened butter and mix until the mixture resembles coarse crumbs.
    3. Gradually add milk and knead until a smooth dough forms.
    4. Cover the dough and let it rest for 30 minutes.
    5. Meanwhile, prepare the filling by combining chopped dates, nuts, and orange blossom water in a bowl.
    6. Preheat the oven to 350°F (175°C).
    7. Divide the dough into small balls, about the size of a walnut.
    8. Flatten each ball and place a teaspoon of the filling in the center, then fold the dough over the filling and shape it into a ball again.
    9. Use a ma’amoul mold to imprint designs on the cookies.
    10. Place the cookies on a baking sheet lined with parchment paper and bake for 15-20 minutes or until lightly golden.
    11. Allow to cool and dust with powdered sugar before serving.
