    Ingredients

    • 2 cups of long-grain rice
    • 1/4 cup of vegetable oil

    • 1 bell pepper, chopped
    • 2-3 carrots, diced
    • 1-2 cups of mixed vegetables (peas, green beans, etc.)
    • 4 cups of chicken or vegetable broth
    • 1 teaspoon of salt
    • 1 teaspoon of black pepper
    • 1 teaspoon of cayenne pepper (optional)
    • 1-2 bay leaves
    • Protein of choice (chicken, fish, or tofu)

    Instructions

    1. Rinse the rice under cold water until the water runs clear, then soak it for about 30 minutes.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and garlic, sautéing until the onions are translucent.
    3. Stir in the blended tomatoes and tomato paste, cooking for about 10 minutes until the mixture thickens.
    4. Add the chopped bell pepper, diced carrots, and mixed vegetables, cooking for another 5 minutes.
    5. Pour in the chicken or vegetable broth, and season with salt, black pepper, cayenne pepper, and bay leaves. Bring to a boil.
    6. Drain the soaked rice and add it to the pot, stirring well. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
    7. If using protein, cook it separately and add it to the rice during the last few minutes of cooking.
    8. Once done, fluff the rice with a fork and serve hot.
