    Description

    Bariis is a traditional Djiboutian rice dish, often flavored with spices and served with meat or vegetables. It holds cultural significance as a staple in Djiboutian households, often enjoyed during family gatherings and celebrations.

    Ingredients

    • 2 cups basmati rice
    • 4 cups water
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander seeds
    • 1 teaspoon cardamom pods
    • 1 teaspoon black peppercorns
    • 1/2 teaspoon turmeric powder
    • Salt to taste
    • 2 tablespoons vegetable oil
    • 1 bay leaf
    • 1 cup mixed vegetables (carrots, peas, bell peppers)
    • Fresh cilantro for garnish

    Instructions

    1. Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
    3. Add the minced garlic, cumin seeds, coriander seeds, cardamom pods, black peppercorns, and bay leaf, stirring for 2-3 minutes until fragrant.
    4. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices.
    5. Pour in the water, add turmeric powder and salt, and bring to a boil.
    6. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
    7. In the last 5 minutes of cooking, add the mixed vegetables on top of the rice, cover again, and allow to steam.
    8. Once done, fluff the rice with a fork and garnish with fresh cilantro before serving.
