Qalb Elouz, also known as ‘Heart of the Almond’, is a traditional Algerian dessert made primarily from semolina, almonds, and sugar. This sweet treat is often enjoyed during special occasions and celebrations, symbolizing hospitality and the rich culinary heritage of Algeria.
Ingredients
- 250g semolina
- 200g sugar
- 100g ground almonds
- 500ml milk
- 100g butter
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp orange blossom water
- Pinch of salt
- Sliced almonds for garnish
Instructions
- In a large bowl, combine semolina, ground almonds, sugar, baking powder, and salt. Mix well.
- In a saucepan, heat the milk and butter until the butter melts. Remove from heat and add vanilla extract and orange blossom water.
- Gradually pour the milk mixture into the dry ingredients, stirring continuously to avoid lumps.
- Let the mixture rest for about 30 minutes to allow the semolina to absorb the liquid.
- Preheat the oven to 180°C (350°F).
- Grease a baking dish and pour the mixture into it, smoothing the top with a spatula.
- Bake for 30-40 minutes or until the top is golden brown.
- Once baked, allow it to cool slightly before cutting into diamond or square shapes.
- Garnish with sliced almonds before serving.
