Ingredients
- 2 cups long-grain rice
- 1 can (13.5 oz) coconut milk
- 1 medium onion, finely chopped
- 2 sprigs fresh thyme
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon vegetable oil
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the rinsed rice to the pot and stir for about 2 minutes, allowing the rice to absorb the flavors.
- Pour in the coconut milk and water, then add the salt and thyme sprigs. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
