    Description

    Ginger Beer is a traditional Malian beverage made from fresh ginger, sugar, and water, often fermented to create a refreshing and slightly spicy drink. It holds cultural significance as a popular thirst-quencher during hot seasons and is often enjoyed during gatherings and celebrations.

    Ingredients

    • 200g fresh ginger, peeled and grated
    • 200g sugar
    • 2 liters water
    • Juice of 2 lemons
    • 1/4 teaspoon active dry yeast (optional for fermentation)

    Instructions

    1. In a large bowl, combine the grated ginger and sugar.
    2. Boil 1 liter of water and pour it over the ginger and sugar mixture, stirring until the sugar dissolves.
    3. Allow the mixture to cool to room temperature.
    4. Once cooled, add the lemon juice and the remaining 1 liter of cold water.
    5. If using yeast, sprinkle it over the mixture and stir gently.
    6. Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours to ferment slightly.
    7. After fermentation, strain the mixture through a fine sieve or cheesecloth into bottles, discarding the solids.
    8. Seal the bottles and refrigerate. Serve chilled.
