Mali Ginger Beer
Description
Ginger Beer is a traditional Malian beverage made from fresh ginger, sugar, and water, often fermented to create a refreshing and slightly spicy drink. It holds cultural significance as a popular thirst-quencher during hot seasons and is often enjoyed during gatherings and celebrations.
Ingredients
- 200g fresh ginger, peeled and grated
- 200g sugar
- 2 liters water
- Juice of 2 lemons
- 1/4 teaspoon active dry yeast (optional for fermentation)
Instructions
- In a large bowl, combine the grated ginger and sugar.
- Boil 1 liter of water and pour it over the ginger and sugar mixture, stirring until the sugar dissolves.
- Allow the mixture to cool to room temperature.
- Once cooled, add the lemon juice and the remaining 1 liter of cold water.
- If using yeast, sprinkle it over the mixture and stir gently.
- Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours to ferment slightly.
- After fermentation, strain the mixture through a fine sieve or cheesecloth into bottles, discarding the solids.
- Seal the bottles and refrigerate. Serve chilled.
