Instructions
- Begin by soaking the mixed dried fruits in dark rum for at least 24 hours, preferably a week, to enhance the flavors.
- Preheat the oven to 300°F (150°C) and prepare a cake pan by greasing and lining it with parchment paper.
- In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and molasses. Mix until just combined.
- Fold in the soaked fruits (with the rum), orange zest, lemon zest, and nuts if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 2 to 2.5 hours, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- For added flavor, you can brush the cooled cake with more rum and wrap it in foil until ready to serve.
