    Ingredients

    • 2 lbs goat meat, cut into pieces

    • 1/4 teaspoon cayenne pepper (optional)
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 1 inch piece of ginger, grated
    • 2-3 scallions, chopped
    • 1-2 Scotch bonnet peppers, whole (adjust for heat preference)
    • 2 tablespoons vegetable oil
    • 4 cups water
    • 2 medium potatoes, peeled and diced
    • 1 carrot, sliced
    • 1 bell pepper, chopped
    • 1 tablespoon fresh thyme or 1 teaspoon dried thyme

    Instructions

    1. In a large bowl, combine goat meat with curry powder, allspice, salt, black pepper, and cayenne pepper. Mix well and let marinate for at least 2 hours, preferably overnight in the refrigerator.
    2. Heat vegetable oil in a large pot over medium heat. Add the marinated goat meat and brown on all sides.
    3. Add onions, garlic, ginger, scallions, and whole Scotch bonnet peppers to the pot. Sauté for about 5 minutes until the onions are translucent.
    4. Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the goat meat is tender.
    5. Add diced potatoes, sliced carrot, chopped bell pepper, and thyme to the pot. Stir well and cook for an additional 30 minutes, or until the vegetables are tender.
    6. Adjust seasoning if necessary and serve hot with rice and peas or roti.
