- 1 bell pepper, chopped
- 2 carrots, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon thyme
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 bay leaf
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chicken and pork, and brown them on all sides.
- Add the smoked sausage, onion, garlic, bell pepper, and carrots, and sauté until the vegetables are softened.
- Stir in the thyme, allspice, salt, and black pepper.
- Add the rice and mix well to coat it with the spices and meat.
- Pour in the water or chicken broth, and add the bay leaf. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
- Stir in the black beans and cook for an additional 5 minutes.
- Remove from heat, discard the bay leaf, and let it sit covered for 5 minutes before serving.
- Garnish with fresh parsley before serving.
