    Instructions

    1. Begin by heating 5 gallons of water in a large brew kettle to about 160°F (71°C).
    2. Add the pale malt and caramel malt to the water, stirring to ensure there are no clumps. Maintain the temperature around 150°F (65°C) for 60 minutes to allow the sugars to extract.
    3. After 60 minutes, raise the temperature to 170°F (77°C) for mash-out.
    4. Sparge the grains with additional hot water to collect about 6 gallons of wort.
    5. Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, adding the Saaz hops in the last 15 minutes.
    6. After boiling, cool the wort quickly using a wort chiller or an ice bath.
    7. Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast.
    8. Seal the vessel with an airlock and ferment at around 50°F (10°C) for 2-3 weeks.
    9. Once fermentation is complete, prepare for bottling by dissolving priming sugar in a small amount of water and adding it to the beer.
    10. Bottle the beer and allow it to carbonate for an additional 2 weeks in a cool, dark place.
