    Ingredients

    • 1 cup chickpeas (soaked overnight)
    • 1/2 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon ginger, grated
    • 1 teaspoon curry powder
    • 1/2 teaspoon cumin
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons vegetable oil
    • 1 cup all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt (for dough)
    • Water (as needed for dough)
    • Hot pepper sauce (for serving)
    • Chopped cilantro (for garnish)

    Instructions

    1. Drain and rinse the soaked chickpeas. In a pot, add chickpeas, chopped onion, garlic, ginger, curry powder, cumin, turmeric, salt, and black pepper. Cover with water and cook until chickpeas are tender, about 30 minutes.
    2. Once cooked, mash some of the chickpeas to create a thicker consistency and set aside.
    3. In a bowl, mix flour, baking powder, and salt. Gradually add water to form a soft dough. Knead for a few minutes until smooth.
    4. Divide the dough into small balls and roll each into a flat disc.
    5. Heat oil in a frying pan over medium heat. Fry each disc until golden brown on both sides.
    6. To assemble, place a spoonful of the chickpea mixture between two flatbreads.
    7. Serve hot with hot pepper sauce and garnish with chopped cilantro.
