- In a bowl, combine minced garlic, oregano, salt, black pepper, cumin, paprika, olive oil, vinegar, orange juice, and lime juice to create a marinade.
- Make deep cuts in the pork shoulder to allow the marinade to penetrate.
- Rub the marinade all over the pork, ensuring it gets into the cuts.
- Place the pork in a large resealable bag or dish, cover, and refrigerate for at least 12 hours, preferably overnight.
- Preheat the oven to 300°F (150°C).
- Place the marinated pork in a roasting pan, adding sliced onions and bay leaves around it.
- Cover the pan with aluminum foil and roast for about 4-5 hours, or until the meat is tender.
- Remove the foil for the last 30 minutes to allow the skin to crisp up.
- Once cooked, let the pork rest for 15 minutes before slicing. Serve with rice and beans or tostones.
