    Ingredients

    • 2 pounds of tannia (yautia), peeled and cut into chunks
    • 4 cups of water

    • 1 bell pepper, chopped
    • 1 teaspoon of black pepper
    • 1 teaspoon of thyme
    • 1 cup of coconut milk

    Instructions

    1. In a large pot, bring the water to a boil and add the peeled and chopped tannia along with the salt. Cook until tender, about 20 minutes.
    2. Drain the tannia and set aside.
    3. In the same pot, heat the coconut oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until softened, about 5 minutes.
    4. Stir in the black pepper and thyme, cooking for another minute.
    5. Add the cooked tannia back into the pot, followed by the coconut milk. Stir well to combine and cook for an additional 5 minutes, allowing the flavors to meld.
    6. Serve hot as a side dish or as a base for stews.
