    Ingredients

    • 2 lbs flank steak

    • 2 cups beef broth
    • 1 tablespoon tomato paste
    • 1 teaspoon ground cumin
    • 1 teaspoon dried oregano
    • 1 bay leaf
    • Salt and pepper to taste
    • Fresh cilantro for garnish

    Instructions

    1. In a large pot, heat the olive oil over medium heat. Add the flank steak and sear on all sides until browned.
    2. Remove the steak and set aside. In the same pot, add the sliced onions and bell peppers, cooking until softened.
    3. Stir in the minced garlic and cook for another minute.
    4. Return the steak to the pot, then add the diced tomatoes, beef broth, tomato paste, cumin, oregano, bay leaf, salt, and pepper.
    5. Bring to a boil, then reduce heat to low, cover, and simmer for about 2-3 hours until the meat is tender and easily shreds.
    6. Remove the steak, shred it with two forks, and return it to the pot, stirring to combine with the sauce.
    7. Serve hot, garnished with fresh cilantro.
