Instructions
- Begin by tenderizing the lambi by pounding it with a meat mallet or rolling pin. Rinse it under cold water and soak it in lime juice for about 30 minutes.
- Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until soft.
- Stir in the Scotch bonnet peppers, thyme, and allspice, cooking for another minute.
- Add the tenderized lambi to the skillet, seasoning with salt and pepper. Cook for about 5-7 minutes, stirring occasionally.
- Pour in the coconut milk and soy sauce, bringing the mixture to a gentle simmer. Cover and cook for an additional 20-25 minutes until the lambi is tender and flavorful.
- Stir in the fresh parsley before serving. Enjoy with rice or bread.
