- The next day, boil the codfish in fresh water for about 15 minutes until tender. Drain and flake the fish, removing any bones.
- While the fish is boiling, peel the green bananas and cut them into halves or thirds.
- In a large pot, bring water to a boil and add the green bananas. Cook for about 15-20 minutes until tender. Drain and set aside.
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until softened.
- Stir in the flaked codfish, thyme, and the whole Scotch bonnet pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
- Gently fold in the cooked green bananas, mixing well to combine. Season with salt and black pepper to taste.
- Remove from heat, garnish with chopped parsley, and serve hot.
