Antigua and Barbuda Saltfish
Description
Saltfish, or salted cod, is a traditional dish in Antigua and Barbuda, often enjoyed for breakfast or lunch. It holds cultural significance as a staple food that reflects the island’s history of fishing and preservation methods.
Ingredients
- 1 lb salted codfish
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 medium tomatoes, diced
- 2 green onions, chopped
- 1 Scotch bonnet pepper, whole
- 2 tbsp vegetable oil
- 1 tsp black pepper
- 1 tsp thyme
- 1/2 cup water
Instructions
- Rinse the salted codfish under cold water to remove excess salt. Soak it in water for at least 8 hours or overnight, changing the water a couple of times.
- After soaking, drain and place the codfish in a pot of fresh water. Bring to a boil and simmer for about 20 minutes until tender. Drain and flake the fish, removing any bones.
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the bell pepper, tomatoes, and green onions. Cook for about 5 minutes until the vegetables soften.
- Stir in the flaked codfish, black pepper, thyme, and the whole Scotch bonnet pepper.
- Pour in the water and mix well. Cover and simmer for another 10 minutes, allowing the flavors to meld.
- Remove the Scotch bonnet pepper before serving. Serve hot with boiled green bananas or fried plantains.
