Ingredients
- 500g dried pumpkin leaves
- 200g groundnuts (peanuts), roasted and ground
- 1 medium onion, chopped
- 2 tomatoes, chopped
- 2 tablespoons vegetable oil

- Water as needed
Instructions
- Rinse the dried pumpkin leaves in cold water to remove any dust or impurities. Soak them in warm water for about 30 minutes to soften.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent.
- Add the chopped tomatoes to the pot and cook until they are soft.
- Drain the soaked pumpkin leaves and add them to the pot, stirring well to combine with the onions and tomatoes.
- Add the groundnuts and enough water to cover the mixture.
- Season with salt to taste and bring to a gentle boil.
- Reduce the heat and let it simmer for about 30 minutes, stirring occasionally, until the leaves are tender and the flavors meld together.
- Serve hot with nshima.
