Description

Ingredients
- 1 kg chicken (cut into pieces)
- 4 large onions (thinly sliced)
- 4 cloves garlic (minced)
- 1/2 cup lemon juice
- 1/4 cup vegetable oil
- 2 tablespoons Dijon mustard
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon cayenne pepper (optional)
- 1 cup chicken broth
- 2 bay leaves
- 1/2 cup green olives (optional)
- Cooked rice (for serving)
Instructions
- In a large bowl, combine the chicken pieces with lemon juice, Dijon mustard, minced garlic, black pepper, salt, and cayenne pepper. Marinate for at least 2 hours, preferably overnight in the refrigerator.
- Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until they are soft and golden brown, about 10-15 minutes.
- Remove the onions and set aside. In the same pot, add the marinated chicken pieces and brown them on all sides.
- Once browned, return the onions to the pot, add the chicken broth, bay leaves, and olives if using. Bring to a simmer.
- Cover and cook on low heat for about 30-40 minutes, or until the chicken is cooked through and tender.
- Serve the Yassa hot over a bed of cooked rice.
