- 2 cups all-purpose flour

- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder (adjust to taste)
- Salt to taste
- Oil for deep frying
Instructions
- In a mixing bowl, combine flour and salt. Add vegetable oil and mix until crumbly. Gradually add water to form a smooth dough. Cover and let it rest for 30 minutes.
- In a pan, heat a little oil and sauté onions and garlic until golden. Add cumin seeds, coriander powder, turmeric, chili powder, and salt. Stir in the mashed potatoes and peas, mixing well. Cook for a few minutes and let the filling cool.
- Divide the dough into small balls and roll each into a thin circle. Cut each circle in half to form two semi-circles.
- Take one semi-circle, fold it into a cone shape, sealing the edge with a little water. Fill the cone with the potato filling and seal the open edge by pinching it together.
- Heat oil in a deep pan over medium heat. Fry the samosas in batches until golden brown and crispy. Drain on paper towels before serving.
