Senegal Ceebu Jen
Description
Ceebu Jen, also known as ‘Thieboudienne’, is a traditional Senegalese dish made with fish, rice, and a variety of vegetables. It holds great cultural significance as it is often considered the national dish of Senegal, reflecting the country’s rich fishing heritage and communal dining practices.
Ingredients
- 1 kg of fresh fish (such as snapper or grouper)
- 500 g of rice
- 2 large onions, chopped
- 4 cloves of garlic, minced
- 1 large tomato, diced
- 2 carrots, sliced
- 1 eggplant, cubed
- 1 bell pepper, chopped
- 200 g of okra, trimmed
- 1 cup of tomato paste
- 1 lemon, juiced
- 1 teaspoon of black pepper
- 1 teaspoon of cayenne pepper
- 1 teaspoon of salt
- 4 cups of water
- 1/4 cup of vegetable oil
- Fresh parsley for garnish
Instructions
- Clean and gut the fish, then marinate it with lemon juice, salt, black pepper, and cayenne pepper for at least 30 minutes.
- In a large pot, heat the vegetable oil over medium heat and sauté the chopped onions and minced garlic until translucent.
- Add the diced tomato and cook for another 5 minutes.
- Stir in the tomato paste and cook for an additional 5 minutes, mixing well.
- Add the sliced carrots, cubed eggplant, and chopped bell pepper to the pot, cooking for about 10 minutes until the vegetables soften.
- Pour in the water and bring to a boil.
- Carefully add the marinated fish to the pot, cover, and let it simmer for about 15-20 minutes.
- Remove the fish and set aside.
- Add the rice and okra to the pot, stirring gently.
- Place the fish back on top of the rice, cover, and cook on low heat for about 20-25 minutes until the rice is fully cooked and has absorbed the flavors.
- Serve hot, garnished with fresh parsley.
