Description
Callaloo is a beloved dish in Grenada, made primarily from the leaves of the dasheen plant, which are cooked down with a variety of ingredients to create a flavorful and nutritious dish. Ingredients
- 1 bunch of callaloo leaves (or spinach as a substitute)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 medium tomato, chopped
- 1 bell pepper, chopped
- 1-2 green onions, chopped
- 1-2 cups coconut milk
- 1 teaspoon thyme
- 1 teaspoon black pepper
- Salt to taste
- 1-2 tablespoons vegetable oil
- Optional: 1-2 cups of diced okra or other vegetables
- Optional: 1-2 cups of crab or salted fish for added flavor
Instructions
- Rinse the callaloo leaves thoroughly and chop them coarsely. If using spinach, rinse and chop similarly.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, bell pepper, and green onions, sautéing until they are soft and fragrant.
- Add the chopped tomato and cook for a few more minutes until it breaks down.
- Stir in the callaloo leaves (or spinach) and cook until they wilt down, about 5-7 minutes.
- If using, add the diced okra or other vegetables at this stage.
- Pour in the coconut milk and add thyme, black pepper, and salt to taste.
- If desired, add crab or salted fish for additional flavor.
- Allow the mixture to simmer for about 15-20 minutes, stirring occasionally, until everything is well combined and cooked through.
- Adjust seasoning if necessary and serve hot as a side dish or main course.
