Ingredients
- 4 chicken thighs, bone-in and skin-on

- 1 teaspoon salt

- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1/4 cup soy sauce
- 1/4 cup vinegar (white or apple cider)
- 2 tablespoons vegetable oil
- Juice of 1 lime
Instructions
- In a blender or food processor, combine allspice, thyme, brown sugar, cinnamon, nutmeg, black pepper, salt, Scotch bonnet peppers, green onions, garlic, ginger, soy sauce, vinegar, vegetable oil, and lime juice. Blend until smooth to create the marinade.
- Place the chicken thighs in a large bowl or zip-top bag and pour the marinade over them. Ensure the chicken is well-coated. Marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off.
- Grill the chicken for about 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the skin is crispy and charred.
- Remove from the grill and let rest for a few minutes before serving. Enjoy with rice and peas or a fresh salad.
