Description
Vindaye is a traditional Mauritian dish that showcases the island’s rich culinary heritage, influenced by Indian, Creole, and Chinese cuisines. Ingredients
- 500g of fish (preferably tuna or mackerel)
- 2 tablespoons of mustard seeds
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander seeds
- 2-3 green chilies (sliced)
- 1 large onion (sliced)
- 4 cloves of garlic (minced)
- 1-inch piece of ginger (minced)
- 1/2 cup of white vinegar
- Salt to taste
- 2 tablespoons of vegetable oil
- Fresh coriander leaves for garnish
Instructions
- Clean and cut the fish into bite-sized pieces.
- In a dry pan, lightly toast the mustard seeds, cumin seeds, and coriander seeds until fragrant, then grind them into a powder.
- In a bowl, mix the ground spices with turmeric, garlic, ginger, and salt.
- Add the fish pieces to the marinade and let it sit for at least 30 minutes.
- Heat the vegetable oil in a pan and sauté the sliced onions until golden brown.
- Add the marinated fish to the pan and cook for about 5-7 minutes until the fish is cooked through.
- Pour in the vinegar and add the sliced green chilies, cooking for an additional 2-3 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
