    • 2 lbs goat meat, cut into pieces
    • 4 cups water

    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • 2 carrots, sliced
    • 2 potatoes, diced
    • 1 bell pepper, chopped
    • 1 Scotch bonnet pepper, whole
    • 1 can (14 oz) diced tomatoes
    • 2 bay leaves
    • 1 tablespoon Worcestershire sauce
    • 1/4 cup chopped green onions

    Instructions

    1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
    2. Add the goat meat to the pot and brown on all sides.
    3. Pour in the water and bring to a boil.
    4. Add thyme, allspice, black pepper, salt, carrots, potatoes, bell pepper, Scotch bonnet pepper, diced tomatoes, bay leaves, and Worcestershire sauce.
    5. Reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the goat meat is tender.
    6. Remove the Scotch bonnet pepper and bay leaves before serving.
    7. Garnish with chopped green onions and serve hot.
