Ingredients
- 1 lb chicken, cut into pieces
- 1 lb beef, cut into pieces
- 1 lb pork, cut into pieces
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 1 large potato, diced
- 1 large sweet potato, diced
- 1 cup yuca, peeled and cut into chunks
- 1 cup corn, fresh or frozen
- 1 green bell pepper, chopped
- 1 tablespoon oregano
- 1 tablespoon cilantro, chopped
- 2 limes, juiced
- 6 cups water
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken, beef, and pork, and brown the meat on all sides.
- Add the chopped onion, garlic, and green bell pepper to the pot, and sauté until the vegetables are soft.
- Pour in the water and bring to a boil. Reduce heat and let simmer for about 30 minutes.
- Add the carrots, potatoes, sweet potatoes, yuca, and corn to the pot. Season with oregano, cilantro, salt, and pepper.
- Continue to simmer for another 30-40 minutes, or until the vegetables are tender and the meat is cooked through.
- Stir in the lime juice before serving.
- Serve hot, garnished with additional cilantro if desired.
