    • Fresh parsley, chopped (for garnish)

    Instructions

    1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
    2. Stir in the minced garlic, cumin, coriander, cinnamon, and paprika, cooking for another minute until fragrant.
    3. Add the lamb or beef pieces to the pot, browning them on all sides.
    4. Pour in the water or broth and bring to a boil. Reduce heat and simmer for about 30 minutes, skimming off any foam.
    5. Add the chopped tomatoes and cooked chickpeas, continuing to simmer for another 15 minutes.
    6. Stir in the vermicelli pasta and cook for an additional 5-7 minutes until the pasta is tender.
    7. Season with salt and pepper to taste.
    8. Serve hot, garnished with fresh parsley.
