    Ingredients

    • 6 red bell peppers, roasted and peeled
    • 4-6 dried red chili peppers, seeds removed

    • 1 teaspoon caraway seeds, toasted and ground
    • 1/2 teaspoon salt
    • 1/4 cup olive oil
    • 2 tablespoons lemon juice

    Instructions

    1. Begin by roasting the red bell peppers over an open flame or in an oven until the skin is charred. Once roasted, place them in a bowl and cover with plastic wrap to steam for about 10 minutes.
    2. Peel the skin off the peppers, remove the seeds, and chop them roughly.
    3. In a dry skillet, toast the dried red chili peppers for a few minutes until fragrant, then soak them in hot water for about 10 minutes to soften.
    4. Drain the chilies and add them to a food processor along with the roasted peppers, minced garlic, cumin, coriander, caraway seeds, and salt.
    5. Blend until smooth, gradually adding olive oil and lemon juice until you reach your desired consistency.
    6. Taste and adjust seasoning if necessary.
    7. Transfer the harissa to a jar and store in the refrigerator for up to a month.
