    • 1 bay leaf
    • 1/2 cup pimento-stuffed olives, sliced
    • Fresh cilantro for garnish

    Instructions

    1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
    2. In the same pot, add the chopped onion, green bell pepper, and garlic. Sauté until the vegetables are soft.
