    Description

    Ingredients

    • 2 cups of potatoes, peeled and diced
    • 1 cup of green peas, fresh or frozen
    • 1 cup of corn, fresh or frozen
    • 1/4 cup of vegetable oil or butter
    • 1 onion, finely chopped
    • 2 cloves of garlic, minced
    • Salt to taste
    • Black pepper to taste
    • Fresh coriander, chopped (optional)

    Instructions

    1. In a large pot, boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.
    2. In the same pot, heat the vegetable oil or butter over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
    3. Add the green peas and corn to the pot, cooking for about 5 minutes until heated through.
    4. Mash the boiled potatoes and add them to the pot, mixing well with the peas and corn.
    5. Season with salt and black pepper to taste. Stir in fresh coriander if using.
    6. Cook for an additional 5 minutes, stirring occasionally, until everything is well combined and heated through.
    7. Serve warm as a side dish or main course.
