Ingredients
- 2 cups of corn (dried or fresh)

- 1/2 lb of smoked fish (such as mackerel or sardines)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 large tomato, chopped
- 1 green bell pepper, chopped
- 1/4 cup of vegetable oil
- 2 bay leaves
- Salt to taste
- Pepper to taste
- Water (as needed)
Instructions
- If using dried corn and beans, soak them overnight in water. Drain before cooking.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the chopped tomato and green bell pepper, cooking for about 5 minutes.
- Add the soaked corn, beans, bay leaves, salt, and pepper. Pour in enough water to cover the ingredients.
- Bring to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the corn and beans are tender.
- In the last 30 minutes of cooking, add the smoked fish to the pot.
- Adjust seasoning as needed and serve hot.
