- 1 kg chicken, cut into pieces

- 1 teaspoon salt
- 1 teaspoon cayenne pepper (optional)
- 2 bay leaves
- 1 cup water
- 2 tablespoons vinegar

- In a large bowl, combine the Dijon mustard, lemon juice, minced garlic, black pepper, salt, cayenne pepper, and vinegar.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Heat the vegetable oil in a large skillet over medium heat. Add the sliced onions and sauté until they are soft and translucent.
- Remove the onions and set aside. In the same skillet, add the marinated chicken pieces and brown them on all sides.
- Once browned, return the onions to the skillet, add the bay leaves, and pour in the water.
- Cover and simmer on low heat for about 30-40 minutes, or until the chicken is cooked through and tender.
- Adjust seasoning if necessary and serve hot with rice or couscous.
