Instructions

- In a bowl, mix the palm oil, onions, garlic, ginger, tomatoes, bell pepper, salt, black pepper, and ground chili.

- Cut the banana leaves into large squares and soften them by briefly passing them over an open flame.
- Place a piece of marinated fish (or chicken) in the center of each banana leaf square.
- Fold the leaves over the fish (or chicken) to create a secure package.
- Place the wrapped packages in a steamer or on a grill over medium heat.
- Cook for about 30-40 minutes, turning occasionally, until the fish (or chicken) is cooked through.
- Serve hot, unwrapped, with a side of cassava or plantains.
