    Description

    Ingredients

    • 500g cassava, peeled and grated
    • 200ml coconut milk
    • 100g sugar
    • 1 tsp vanilla extract

    • 1/4 cup grated fresh coconut (optional)
    • Banana leaves for wrapping (optional)

    Instructions

    1. Begin by peeling and grating the cassava. Place the grated cassava in a clean cloth and squeeze out excess moisture.
    2. In a large mixing bowl, combine the grated cassava, coconut milk, sugar, vanilla extract, salt, and baking powder. Mix well until all ingredients are thoroughly combined.
    3. If using, fold in the grated fresh coconut for added texture.
    4. If you have banana leaves, cut them into squares and lightly steam them to make them pliable.
    5. Spoon the cassava mixture onto the center of each banana leaf square, fold the leaves over to create a parcel, and secure with kitchen twine or toothpicks.
    6. Place the parcels in a steamer and steam for about 30-40 minutes until firm and cooked through.
    7. Remove from the steamer and let cool slightly before unwrapping. Serve warm or at room temperature.
