- 1/2 pound of chicken thighs, bone-in
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 medium tomatoes, chopped
- 1 bell pepper, chopped
- 2 bay leaves
- 1 teaspoon of paprika
- Salt and pepper to taste
- Water or chicken broth as needed
- Olive oil for cooking
- Fresh cilantro for garnish
Instructions
- Begin by soaking the dried corn in water overnight. Drain and set aside.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the pork shoulder and chicken thighs to the pot, browning them on all sides.
- Stir in the sliced sausage, bell pepper, and tomatoes, cooking for another 5 minutes.
- Add the soaked corn, kidney beans, bay leaves, paprika, salt, and pepper. Pour in enough water or chicken broth to cover the ingredients.
- Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 1.5 to 2 hours, stirring occasionally, until the corn and beans are tender.
- Adjust seasoning as necessary and remove bay leaves before serving.
- Garnish with fresh cilantro and serve hot.
