- 1 large onion, chopped

- Black pepper to taste
- Fresh coriander for garnish
Instructions
- Rinse the dried matemba under cold water to remove excess salt and impurities. Drain and set aside.
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until they are translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped tomatoes and green bell pepper, cooking until the tomatoes soften.
- Sprinkle in the paprika, salt, and black pepper, stirring well to combine.
- Gently fold in the rinsed matemba, ensuring they are coated with the mixture.
- Cover the pan and let it simmer for about 10-15 minutes, stirring occasionally.
- Once cooked, garnish with fresh coriander before serving.
