- Heat the olive oil or niter kibbeh in a large pot over medium heat.
- Add the chopped onions and sauté until they are translucent.
- Stir in the minced garlic and ginger, cooking for an additional 2 minutes.
- Add the turmeric, salt, black pepper, and red pepper flakes (if using), and mix well.
- Gradually add the chopped collard greens, stirring to combine with the onion mixture.
- Pour in the vegetable broth or water, cover the pot, and reduce the heat to low.
- Allow the greens to simmer for about 30 minutes, stirring occasionally, until they are tender.
- Adjust seasoning if necessary, and serve warm with injera.
