Description
Bariis Iskukaris is a traditional Somali rice dish that is often served with a variety of meats and vegetables. It is a staple in Somali cuisine, reflecting the rich agricultural heritage and communal dining practices of the Somali people.
Ingredients
- 2 cups basmati rice
- 4 cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon black pepper
- Salt to taste
- 1 cup mixed vegetables (carrots, peas, and green beans)
- 1/4 cup raisins (optional)
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, cumin seeds, coriander powder, turmeric powder, black pepper, and salt. Cook for 2-3 minutes until fragrant.
- Add the mixed vegetables and sauté for another 5 minutes.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the spices and vegetables.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- If using, stir in the raisins during the last 5 minutes of cooking.
- Once done, fluff the rice with a fork and garnish with fresh cilantro before serving.
