Description
Mahshi is a traditional Egyptian dish consisting of vegetables, typically zucchini, eggplant, or bell peppers, stuffed with a flavorful mixture of rice, herbs, and spices. Ingredients
- 6 medium zucchini or eggplants
- 1 cup short-grain rice, rinsed
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon allspice
- Salt and pepper to taste
- 2 cups vegetable broth or water
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
Instructions
- Begin by preparing the vegetables: Cut the tops off the zucchini or eggplants and scoop out the insides using a small spoon, creating hollow shells. Set aside the scooped flesh for later use.
- In a pan, heat the olive oil over medium heat and sauté the chopped onion until translucent. Add the chopped tomatoes and the reserved vegetable flesh, cooking until softened.
- Stir in the rinsed rice, parsley, dill, mint, cinnamon, allspice, salt, and pepper. Mix well and cook for a few minutes until the rice is slightly translucent.
- Stuff each hollowed vegetable with the rice mixture, leaving a little space at the top for the rice to expand during cooking.
- In a large pot, arrange the stuffed vegetables upright. Mix the vegetable broth or water with the tomato paste and pour it over the stuffed vegetables.
- Cover the pot and simmer on low heat for about 45 minutes, or until the rice is fully cooked and the vegetables are tender.
- Serve warm, garnished with additional herbs if desired.
