    Ingredients

    • 2 cups basmati rice
    • 500 grams lamb or beef, cut into cubes

    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander powder

    • 1 cinnamon stick
    • 4 cups water
    • Salt to taste
    • Fresh cilantro for garnish

    Instructions

    1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
    2. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and sauté until they start to sizzle.

    4. Stir in the chopped tomatoes, coriander powder, turmeric, black pepper, and salt. Cook until the tomatoes soften.

    6. Pour in the water and add the cinnamon stick. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the meat is tender.
    7. Remove the meat and set aside. Strain the broth and return it to the pot.
    8. Add the soaked rice to the broth and bring to a boil. Reduce the heat to low, cover, and cook for about 20 minutes, or until the rice is fluffy and cooked through.
    9. Once the rice is done, fluff it with a fork and mix in the reserved meat.
    10. Garnish with fresh cilantro before serving.
