    Ingredients

    • 2 cups basmati rice
    • 4 cups water or chicken broth

    • 1 cinnamon stick
    • 2 cardamom pods

    • Salt to taste
    • 2 tablespoons vegetable oil or ghee
    • Fresh cilantro for garnish

    Instructions

    1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
    2. In a large pot, heat the vegetable oil or ghee over medium heat. Add the cumin seeds, coriander seeds, cinnamon stick, cardamom pods, and bay leaf, sautéing until fragrant.
    3. Add the chopped onion, garlic, and ginger, cooking until the onion is translucent.
    4. Stir in the turmeric powder and mixed vegetables, cooking for another 5 minutes.
    5. Add the drained rice to the pot, stirring gently to coat the rice with the spices and vegetables.
    6. Pour in the water or chicken broth and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
    7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
