Ingredients
- 2 cups grated cassava
- 1 cup grated cocoyam
- 1 cup coconut milk
- 1 teaspoon salt
- 1 tablespoon ground pepper (optional)
- Banana leaves for wrapping
Instructions
- Peel and wash the cassava and cocoyam thoroughly. Grate them using a grater or food processor.
- In a large bowl, mix the grated cassava and cocoyam together.
- Add the coconut milk, salt, and ground pepper (if using) to the mixture and stir until well combined.
- Cut banana leaves into large squares and lightly wilt them over a flame to make them pliable.
- Place a portion of the mixture in the center of each banana leaf square, fold the leaves over to create a parcel, and secure with kitchen twine or toothpicks.
- Arrange the parcels in a steamer and steam for about 45 minutes to 1 hour, or until firm and cooked through.
- Remove from the steamer and let cool slightly before serving.
