    Ingredients

    • 1 kg beef (silverside or topside)
    • 60 ml coarse salt
    • 15 ml black pepper
    • 15 ml coriander seeds, crushed

    • 5 ml Worcestershire sauce

    Instructions

    1. Trim excess fat from the beef and cut it into strips about 2-3 cm thick.
    2. In a bowl, mix the salt, black pepper, crushed coriander seeds, and brown sugar.
    3. Rub the spice mixture evenly over the meat strips.
    4. Place the meat in a container, cover, and refrigerate for 24 hours to allow the flavors to penetrate.
    5. After marinating, rinse the meat under cold water to remove excess salt and spices.
    6. Pat the meat dry with paper towels.
    7. Brush the meat with vinegar and Worcestershire sauce for added flavor.
    8. Hang the meat strips in a cool, dry, and well-ventilated area, or use a dehydrator, for 5-7 days until fully dried.
    9. Once dried, slice the biltong into thin pieces and store in an airtight container.
