- Heat the vegetable oil in a potjie pot over an open fire.
- Brown the beef cubes in the pot until they are well-seared on all sides.
- Add the chopped onions and garlic, sautéing until the onions are translucent.
- Stir in the paprika, cumin, black pepper, and salt, mixing well.
- Layer the diced potatoes, carrots, and bell pepper over the meat without stirring.
- Pour in the beef broth and diced tomatoes, ensuring the vegetables are not disturbed.
- Cover the pot with its lid and let it simmer over low heat for about 2-3 hours, checking occasionally to ensure it does not burn.
- Once the meat is tender and the vegetables are cooked through, remove from heat.
- Garnish with fresh herbs before serving.
