    Description

    Rechta is a traditional Algerian dish made of thin, homemade noodles served with a rich chicken or lamb stew. It holds cultural significance as a festive dish often prepared during special occasions and gatherings, symbolizing hospitality and community.

    Ingredients

    • 500g of rechta noodles (or thin pasta)
    • 1 kg of chicken or lamb, cut into pieces
    • 2 large onions, finely chopped
    • 4 tablespoons of vegetable oil
    • 1 teaspoon of ground cinnamon
    • 1 teaspoon of ground ginger
    • 1 teaspoon of turmeric
    • Salt and pepper to taste
    • 1 liter of chicken or vegetable broth
    • 2 tablespoons of chickpeas, soaked overnight
    • Fresh coriander for garnish

    Instructions

    1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent.
    2. Add the chicken or lamb pieces to the pot and brown them on all sides.
    3. Stir in the ground cinnamon, ginger, turmeric, salt, and pepper. Cook for a few minutes to release the spices’ aromas.
    4. Add the soaked chickpeas and pour in the broth. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the meat is tender.
    5. While the stew is cooking, prepare the rechta noodles according to package instructions or make them from scratch.
    6. Once the meat is cooked, remove it from the pot and set aside. Strain the broth if desired.
    7. Serve the rechta noodles in a large dish, topped with the stew and garnished with fresh coriander.
    8. Optionally, serve the meat on the side or shredded on top of the noodles.
