Description

Ingredients
- 3 cups long-grain parboiled rice
- 1/4 cup vegetable oil
- 1 large onion, chopped
- 1 red bell pepper, blended
- 1 green bell pepper, chopped
- 2 cups tomato puree
- 1 tablespoon tomato paste
- 2 teaspoons thyme
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 4 cups chicken or vegetable broth
- Salt to taste
- Black pepper to taste
- 2 cups mixed vegetables (carrots, peas, green beans)
- Protein of choice (chicken, beef, or fish) – optional
Instructions
- Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the blended red bell pepper, tomato puree, and tomato paste to the pot. Cook for about 10-15 minutes, stirring occasionally, until the mixture reduces and the oil begins to separate.
- Stir in the thyme, curry powder, paprika, salt, and black pepper.
- Add the broth and bring to a boil. Once boiling, add the drained rice and stir well.
- Reduce the heat to low, cover the pot, and let it cook for about 25-30 minutes, or until the rice is tender and has absorbed the liquid.
- In the last 10 minutes of cooking, add the mixed vegetables and protein if using, stirring gently to combine.
- Once cooked, fluff the rice with a fork and serve hot.
