Description

Ingredients
- 500g lamb or beef, cut into cubes
- 1 large onion, finely chopped
- 2 medium tomatoes, chopped
- 2 carrots, diced
- 1 zucchini, diced
- 1 potato, diced
- 1 cup chickpeas, soaked overnight and drained
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 2 liters water
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they are translucent.
- Add the meat cubes and brown them on all sides.
- Stir in the chopped tomatoes and tomato paste, cooking for a few minutes until the tomatoes soften.
- Add the carrots, zucchini, potato, and chickpeas to the pot.
- Season with cumin, coriander, paprika, cinnamon, salt, and pepper. Stir well to combine.
- Pour in the water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours, or until the meat and vegetables are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley and lemon wedges on the side.
